Each week, Shape Flour mills small batches of whole-grain high protein ancient grains – Einkorn, Emmer, Spelt and Khorasan. As a result, the Shape Flour grains that you buy at the Farmers’ Market each week are at peak freshness and peak nutritional value, retaining the bran and germ. All are high in protein and still contain sufficient gluten to make bread, when fermented with a natural leaven for a long rise - namely the sourdough process. The resulting breads are easier to digest. These hard and soft wheat flours add unique flavor to all your baking. The extraordinary taste and textures with stone mill process allow you to create sustainable artisanal products. With Shape fresh-milled flours you get fully organic, freshly milled flour from local sources all the way back to Canadian farmers. A joy to bake with.
